Carrot Miso Ginger Soup

One of my favorite foods in the world is the ginger dressing that is served with salads at most Japanese restaurants. I am always ridiculed because I finish my dressing with a spoon, but it has always made me think that I should just eat it like a soup. So when I came across the recipe for carrot miso ginger soup on smitten kitchen, which claimed to be similar to ginger dressing, I went out and bought the ingredients immediately. I loved how simple the soup seemed to make, and I was pretty pumped to try out my new food processor I got for Christmas.

Overall, the soup was extremely easy to make, save one mishap with the food processor which caused me to lose some broth. It turned out tasting delicious, and definitely reminds me of my beloved salad dressing. In fact, I am planning to manipulate the recipe a little bit and make my own ginger dressing. One thing I would recommend is adding about 1/2 cup more vegetable broth (though I did probably lose that much, I still think it needed a little more liquid than called for).
